Kerala Style Egg Roast, also known as Mutta Roast, is a classic dish from South India that’s both comforting and flavorful. This recipe combines hard-boiled eggs with a rich onion-tomato masala infused with aromatic spices.

 To begin, boil eggs, peel them, and make small slits so the masala seeps in. In a pan, heat coconut oil for that authentic Kerala flavor, then sauté sliced onions until golden brown. Add ginger-garlic paste, green chilies, curry leaves, and let the aroma bloom.

 Stir in chopped tomatoes, turmeric, chili powder, coriander powder, garam masala, and a pinch of black pepper. Cook until the masala thickens and oil separates. Add the boiled eggs, gently coat them in the masala, and let it simmer for a few minutes. Garnish with fresh curry leaves. This spicy egg roast pairs beautifully with appam, puttu, chapati, or steamed rice, making it a hearty Kerala-style comfort meal.
