Soup
• 500 g celeriac (approx. 17.6 oz)
• 1 large tart apple
• 1 small onion
• 1 clove of garlic
• 2 tbsp olive oil
• 700 ml strong vegetable stock (3 cups)
• 100 ml oat or soy cream (1/2 cup)
• Salt
• black pepper
• a small pinch of nutmeg
Roasted apple cubes
• 1–2 apples
• 1 tsp olive oil
• 1 tbsp sugar
• a small pinch of salt
Dark herbal oil
• 3 tbsp olive oil
• finely chopped parsley or chives (approx. 2 tbsp, chopped)
• black pepper
