         Orange Chickpea & Veggie Stirfry

Ingredients
1 can chickpeas, rinsed and drained⠀
1/4 red onion, roughly chopped⠀
1/2 zucchini, sliced and quartered⠀
1 cup roasted broccoli ⠀
1/2 naval orange⠀
1 tbsp soy sauce⠀
1 tsp maple syrup ⠀
1/2 tsp ginger powder⠀
1 tsp red pepper flakes⠀
1/2 tsp cornstarch ⠀
2 tbsp water⠀

On a baking sheet, add broccoli and chopped zucchini and bake at a 400F oven for 10-15 minutes. While that roasts, prepare sauce by combining soy sauce, maple syrup, juice of half the orange, add whisk until no clumps remain. Add onions to a pan and cook to soften, about 3 minutes.

 Add in chickpeas and top with sauce. In a small bowl, combine cornstarch and water and pour into stir fry. Allow mixture to cook for 1-2 minutes or until sauce thickens . Remove from heat and serve as desired. Enjoy
